Method
Preheat oven to 350°F.

Spread almonds on a baking sheet and toast in the preheated oven for 8–10 minutes, until fragrant and lightly golden. Let cool.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In a separate bowl, beat eggs, egg yolks, almond extract, and vanilla together.

Add wet mixture to dry ingredients along with almonds and stir to combine.

Divide dough into quarters, form into 4 logs, place on baking sheet, and bake for 35 minutes.

Remove from oven and slice on an angle.
×
Return slices to baking sheet and rebake for 10–15 minutes, flipping halfway, until golden and crisp.
