Ingredients
- 3 3/4 cups flour
- 2 cups sugar
- 1 tsp baking powder
- ¼ tsp salt
- 4 eggs
- 2 egg yolks
- 1/2 tsp almond extract
- 1 tsp vanilla
- 1 2/3 cup almonds
Method
- Preheat oven to 350°F.
- Spread almonds on a baking sheet and toast in the preheated oven for 8–10 minutes, until fragrant and lightly golden. Let cool.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, beat eggs, egg yolks, almond extract, and vanilla together.
- Add wet mixture to dry ingredients along with almonds and stir to combine.
- Divide dough into quarters, form into 4 logs, place on baking sheet, and bake for 35 minutes.
- Remove from oven and slice on an angle.
- Return slices to baking sheet and rebake for 10–15 minutes, flipping halfway, until golden and crisp.
