  • 3 3/4 cups flour
  • 2 cups sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4 eggs
  • 2 egg yolks
  • 1/2 tsp almond extract
  • 1 tsp vanilla
  • 1 2/3 cup almonds

Method

  1. Preheat oven to 350°F.
  2. Spread almonds on a baking sheet and toast in the preheated oven for 8–10 minutes, until fragrant and lightly golden. Let cool.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, beat eggs, egg yolks, almond extract, and vanilla together.
  5. Add wet mixture to dry ingredients along with almonds and stir to combine.
  6. Divide dough into quarters, form into 4 logs, place on baking sheet, and bake for 35 minutes.
  7. Remove from oven and slice on an angle.
  8. Return slices to baking sheet and rebake for 10–15 minutes, flipping halfway, until golden and crisp.
